Like the search for the Gold Standard of Bacon, I am on a quest for the ultimate Chile Verde. We have traveled the country in search of the tender cubes of pork swimming in a pool of green chile love. Attempts at creating chile verde at home have been fun Sometimes we have come close to reaching Mecca. Santo Coyote sure was close. The picture says it all!

ReplyDeleteSometimes I want the tomatillo based version and sometimes I just want all the green chile punch I can get (NM style).
The one thing I know for sure is that there is a special place in HELL for those who put celery in Chile Verde.
Greg, The Ultimate is usually the one in front of me. I did have a really bad one though. It was a Mexican restaurant that had been bought by Asian's. They used green food coloring in the sauce and served it over white rice.

ReplyDeleteWe need to head to Denver then. They be the hub for world class chile verde for as long as anyone can remember. When chile season hits, the owners head down south to buy the very best. If you know anyone from Denver, and they eat, they'll say they've never had any better chile verde than when in Denver.

ManOMan... that picture looks awesome. There's a local mex joint that does pork enchiladas verde, and man are they good.
ReplyDeleteThey also do a dish called Puerco Con Salsa Roja, which is just outstanding, specially when the weather gets cold... (like today... 23 degrees this am.)
