SPENCER STEAK
We were at our last BBQ contest of the year in Oriville California and we had a craving for beef. I guess all that great award winning barbecue whetted our appetites. We needed to visit the Wagon Wheel Market to scratch our itch.. Have you ever heard of the "Spencer Steak'? We saw a beautifully marbled boneless steak displayed in the meat case labeled as a Spencer Steak. It looked like a 'Rib-Eye'.. We asked the friendly clerk about the Spencer steak. She had to ask the butcher on duty and we discovered it is just another name for the rib-eye. What ever you want to call it, it was delicious.

That is a fine looking piece of meat.
I was thinking it looked like a ribeye. Nice looking chunk of beef. How do you prepare? Are you a minimalist?

I am a salt, pepper, granulated garlic kinda guy. But, on Sunday, it did put some Gorgonzola on after the flip. Pretty good...
Spencers are from the North side of the cattle, ribeyes from the left....sheesh, thought everyone knew that ;) :p
Except for in Australia, it's reverse there!
